Kelp Noodles are a sea vegetable in the form of an easy to eat noodle. Made of only kelp (a sea vegetable), sodium alginate (sodium salt extract from a brown seaweed), and water, Kelp Noodles are fat-free, gluten-free and very low in carbohydrates and calories. Their noodle form and neutral taste allow for a variety of uses including salads, stir-fries, hot broths, and casseroles while their healthful content provides a rich source of trace minerals including iodine, which kelp is well-known for. Kelp Noodles, cut to desired length
Honey mustard salad dressing
Cucumber and carrot, sliced thinly
Combine all ingredients and mix well. Salt to taste.

I've been using Kelp noodles for a while since I've turned to a raw food diet. I make raw Pad Thai and Pesto mainly and I'm happy with this product. I couldn't have it too often though because I used to pay up to AUD$10.50 per pack in Australia! Thanks iHerb for the great price. Tip: you need to wash and rinse them when you get them out of the pack. Then soak them in water with lemon juice and some tamari/nama shoyu or Braggs liquid aminos for approx 3 hours to soften them, or else they are too crunchy and nothing like a noodle. You can then rinse them if you like, to get rid of those flavours if they don't go with your dish. The people who don't like them just don't know how to prepare them, because they taste exactly like any other noodles when prepared as above. They should really have instructions on the packet!
I really like these noodles, but there are two things to note: They are made from kelp, which is great for most of us. However, those with hyPERthyroidism and those with Hashimoto's may notice side effects if you eat the whole package at once (like I do). The other thing to note is that letting these cook for a few minutes or sit in your sauce for 20 minutes or more will soften them; before doing so, they're on the crunchy side.

So these are OK as a filler to your dish, but they don't feel like noodles at all. They're crunchy and are sort of like bean sprouts/hard juicy jelly. It's hard to explain. It's something that would go better in a salad rather than a noodly dish, as they crunch and pop. Do not soften in hot water, they stay sort of stiff the whole time. Also not filling at all (no wonder, given the calories, but just saying). No flavor at all, like crunchy water
this is a great subistute for noodles that are low carb and gutlin free.

Cook these and they essentially turn into rice noodles. Squishy, satisfying rice noodles that taste great in a satay sauce. Cold, they are crunchy and bizarre; something I thoroughly reject in noodle-dom. Related certainly to some sort of cephalopod. Properly prepared, you could trick just about anyone.
