I eat this stuff with a spoon by itself. It's moist, rich, and flavorful. When you chew it the oil in the coconut separates in your mouth. It has a rich pleasant almost buttery taste. The coconut flakes are filling because of the high fiber content and this stuff is just plain good for you. Best of all it's not sweetened! It's hard/impossible to find unsweetened shredded coconut in the supermarket or anywhere else for that matter. Americans are so use to having sugar dumped in everything they don't know what food tastes like without it. The average american does not buy any real food- they only buy sugar that is flavored with other foods. Coconut flavored sugar, tomato flavored sugar (ketchup), oat flavored sugar (those garbage instant oatmeal packets), bean flavored sugar (baked beans), chocolate flavored sugar (hershey bar). I can tell you that all these foods taste better without sugar. They taste like they are supposed to. Go an adequate time without eating any sugar and you do not miss it at all. This is coming from a 24 year old 6'2" guy that weighed 290lbs in high school and used to eat ice cream out of the half gallon carton. Their Coconut is steamed for blanching. The drying process takes 40-45 minutes and reaches temperatures of 350°F. There are no chemicals used in processing the coconut meat. The color is not bright white like all other brands, it is a bit between white and pale yellow.
